Pumpernickle Bread

Yet another bread machine recipe: Pumpernickel Bread! I have been pretty busy lately and it is really fun (and convenient) to put all the ingredients in my bread machine and in a while out comes yummy bread! Well, yummy bread usually comes out, but sometimes out comes something that feels and looks more like a burnt rock, but that usually happens if I alter something or use the wrong setting for a recipe not in my book.  This one turned out alright, but it got a little too done on the whole wheat setting in my machine.

Recipe for 2 lb loaf (large):

Put all the following in the machine, in the order specified by the manufacturer and use “whole wheat setting” – which on mine takes a lengthy 5 hours.

  • 1 1/2 C warm water
  • 1 1/2 T oil
  • 2 T molasses
  • 1 1/2 t salt
  • 1 1/2 C Rye flour
  • 1 1/2 C bread flour
  • 1 C whole wheat flour
  • 1/3 C gluten
  • 1 T cocoa – (add more if you like, or also some espresso powder)
  • 2 t active dry yeast
